I've been doing mock battles on my recorded wifi battles to test out a team. I came across one where I beat my cousin who used a Machamp. I never payed it any attention before but now I'm curious. He got owned by my sand veil Garchomp a few times and he said that Machamp was the best way to deal with it. He lost because I simply switched gears to my Mega Garchomp but playing a mock battle against it made me curious. My question is how exactly would Machamp deal with the evasion from sand veil?

My understanding is that no matter how much the opponent boosts their evasion/lowers your Pokémon’s accuracy, if your Pokémon’s ability is No Guard, then all of your moves will hit, no matter what. Sand Veil technically increases evasion (though it’s calculated as a percentage) so Dynamic Punch (a move almost all Machamps have) or really any other move, will always hit.

Note that you can also take advantage of No Guard if you have a below 100% accurate move that can deal a good amount of damage to the Machamp.

Also, so this isn’t confusing, I’m almost 100% sure that your cousin has a No Guard Machamp to counter Sand Veil.

His Machamp might have no guard. This ensures that all attacks, even yours, will hit as long as he is in the battlefield. This ignores sand veil, so it is probably his best choice to fight your garchomp.
